Roux

Monday, February 25, 2019

This recipe is for an ingredient in other more advanced recipes. It's a starter for many sauces, and causes them to be thicker.

Ingredients

These quantities are enough for one serving. They adjust fairly well up and down.

  • 1 TBS unsalted butter
  • 1 TBS all purpose flour

Tools

  • 1 quart saucepan.
  • Metal whisk.

Directions

  1. Melt butter in saucepan on low heat.
  2. Add flour, turn up to medium heat, and start whisking. i
  3. Keep whisking until just before it starts to turn brown. ii
